A light, easy-as-pie vegetarian sandwich that is perfect to have on a hot summer’s day! Especially if your fridge is looking a little light for good sandwich ingredients.

- Yields: 8 servings
Ingredients
- 2 slices of ciabatta bread
- 1 and ½ tablespoons of pesto
- 1 ounce of fontina cheese, sliced
- ¼ of a ripe tomato
- ½ leaf of butter lettuce
Directions
- Step 1
Preheat broiler.
- Step 2
Spread pesto on bread. Top bottom half with slices of fontina cheese, and then place slices of tomato on top of cheese. Broil until cheese melts, and remove from broiler.
- Step 3
Place lettuce over tomato, and then position the top half of the bread on top of everything.
